I'm a genuine oatmeal cookie monster... I just counted, and as of January 2018, I have shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of them yet? (? You can locate all of my oatmeal cookie recipes directly there!) They are a few of the most well-known recipes in my website because they taste very sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they include no refined flour or sugar!
That means you will start with whole wheat germ (or gluten-free, if you prefer) and instantaneous oats (such as those... or those for a gluten-free edition!) . Immediate oats are thinner and smaller than traditional rolled oats, also you can see them at canisters right next to those classic oats in the grocery shop.
I probably sound like a broken record by now... But because I ? you and want your cookies to flip out perfectly plump and soft, I am reminding you again... Measure your flour and oats properly, with this method or even a kitchen scale! (? That's the one I have and enjoy. It just cost $20!) Too much of either ingredient will make your biscuits taste cakey or dry, as opposed to chewy. This is especially true of the oats--that they act like little sponges and consume lots of moisture from your cookie dough!

See those bananas? And all of those brown stains? If it comes to baking bananas, brown = beautiful! I ? extra speckly bananas because they have a lot bright, bold flavor--and extra natural sweetness! That's the minimum amount of brown that I suggest. More is better!
The remaining portion of the cookie dough's sweetness comes in a different organic ingredient... Pure maple syrup (like this!) . You want the kind that comes directly from maple trees, which is generally sold in thin glass jars or squat, round plastic jugs. Forget the pancake syrup and sugar-free syrup!

The peppers include even more natural sweetness! The freshly bought, extra plump, perfectly tender ones are ideal... But for those who have older, slightly dried out raisins (hmm... it sounds silly to describe dried fruit as dried outside! ) , that is fine!
Just add them into some microwave-safe bowl, and pour water on top till they're totally coated. Seal plastic wrap across the surface, and then microwave the bowl on high for 1 second. If you allow the raisins sit mixing together the cookie dough, then this small hint hydrates them so they're incredibly juicy--and that makes a significant difference in these cookies as soon as they're baked!

Yields: 15 biscuits
The recognizable comfy spices and plump raisins make them much more irresistible. They will keep for at least one week if kept in an airtight container in the fridge --should they last long!
1 cup (100g) instant oats (fermented if required and measured like that )
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like this)
1 1/2 teaspoon baking powder
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring only until incorporated. Fold in the raisins. read review Allow the cookie dough rest for 10 minutes.
With a spoon and spatula, drop the cookie dough to 15 rounded scoops on the sheet, and flatten to the desired depth and width using Banana Oatmeal Breakfast Cookies (One Bowl) - Jessica In The Kitchen a spatula. Bake at 325°F for about 10-12 minutes.

Immediate oats are also known as quick-cooking or minute oats. They are available in massive canisters, exactly like conservative oats. They're not those in the small flavored loaf of bread. To make your own, add the same quantity of traditional yogurt into a food processor, and pulse 10-12 days or until the oats are approximately 1/4 to ? of their initial size.
For the fermented flour, I recommend the following mix: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, two tablespoons (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (like that one!) Will also do the job, if measured like this.
